Roasted Banana with Yoghurt, Mint and Honey

Ingredients

1 banana unpeeled

3 tablespoons Greek-style yoghurt

1 tablespoon chopped fresh mint leaves

1 tablespoon honey

Directions

Preheat the oven to 200C/400F.

Bake the banana in its skin for 7-10 minutes, or until soft.

Meanwhile, combine the yoghurt, mint leaves and honey in a mixing bowl.

To serve, split open the banana and spoon over the yoghurt mixture.
